Cake it Easy
This New York City style cake shop makes a wide range of cakes, cupcakes, and cake pops for any event. The cakes, delightful and custom made for the customer, include graceful wedding cakes, cheerful spring flower cupcakes, cake pop bouquets, and creative birthday cakes with such themes as Winnie the Pooh, trains, dragons, cuddly puppies, and super heroes.

The designs on the cakes are usually edible. For example, a cake with M&M characters and M&Ms cascading from a bag is completely edible except for the bag! A train on one cake is sculpted from Rice Crispy Treats and has popcorn billowing out of the smoke stack.

Owners Tamra Kirk (who grew up in Ben Avon) and Len Franklin were both corrections officers in Pittsburgh for many years before embarking on the cake business. Tamra had always liked baking, but after accepting a dare to make a tiered cake, she was hooked. When someone from Midtown Manhattan’s Fortune 500 catering company, Certé, saw photos of her work, he offered her a job. As head pastry chef, Tamra made desserts for a wide variety of customers, including sports teams and Broadway actors.

Weary of the New York City lifestyle and homesick for Pittsburgh, the owners decided to open a cake shop in Bellevue. Tamra still travels back to Certé to help with large events when needed.

In addition to designing, making, and delivering cakes, the store carries cake-making products such as sheets of parchment paper, Merkens chocolate, edible glitter, sprinkles and flowers, chocolate molds, cookie cutters, and cake dummies for fondant. Keep an eye on Cake It Easy’s website for classes on using fondant, creating edible flowers, and characters, icing cakes and a cupcake class for kids.
