Chef John King will demo the preparation of three different soups: Shrimp Gumbo, Cream of Asparagus and a Vegan Vegetarian soup. Soups are one of John’s favorite foods to prepare. Soups can be nutritious, soul warming and the perfect way to use left-over meats and vegetables. The techniques to be reviewed include making of fresh stocks, sweating and roasting vegetables, melting, proper seasoning, use of natural thickening agents and herbs and foods as coloring agents. John will also discuss the use of leftovers and, of course, shortcuts.

When arriving at Bellevue United Presbyterian Church, enter by the left hand door facing the school and take the steps to the basement kitchen.

After serving in the Air Force, John attended the Culinary Institute of America in Hyde Park, New York, worked in various restaurants on the East Coast and Maui, Hawaii before moving to Pittsburgh where he was Executive Chef at Allegheny Country Club for 28 years. Now retired, John is currently on the Board of the local Pittsburgh chapter of the American Culinary Federation. He has also taught a Menu Design course as a CCAC Adjunct Professor for students at Westinghouse High School and most recently has collaborated with another local resident to open a restaurant in Bellevue later this year.
